Hot, Hot, Hot!

   It’s been pretty hot in my kitchen lately.  Why?  Because I’ve been doing some canning.  Spicy Tomato Salsa about a week ago and Zucchini Relish today.  I started work on the relish yesterday…all that chopping (and I only cut myself once)!  14 cups of diced zucchini!?!  Not to mention the onions, green & red bell peppers, and a hot pepper to give it some zest.  My daughter loves corn and wants me to make some corn relish next.  That’s going to have to wait a little while because I have a bunch of apples waiting to be made into Apple Pie Jam.  Then, I may have time to do corn relish. 

   Just so you don’t think I dislike canning, I have to say that it’s one of my favorite things!  I especially love all the prep work (choppping & such).  Last fall, I did my first canning in over 20 years and really loved it.  I can’t wait to see what other delights come from my kitchen this fall!  Most of my canned goods will be given as gifts this Christmas.  I hope the recipients of these gifts enjoy them because lots of love and hard work have gone into the making. 

   To top off today’s busyness, we’re having company for supper tomorrow so I have lots of other things to do.  I need to make potato salad, deviled eggs (the eggs were boiled this morning), and a cake, as well as clean the house and do laundry.  I’m sure some of this stuff just won’t happen, but that’s ok.  We’re still going to have a fun time cooking burgers on the grill while a few brave souls take one final dip in the pool before we close it for the season.
